2 Chicken breasts (cut in strips)
I tbsp chopped Onion
1 tbsp chopped scallions
¼ tsp thyme
1 clove garlic, finely chopped
1 tsp Benjamins Soy Sauce
¼ tsp Benjamins Hot Pepper Sauce
¼ tsp vinegar
¼ -½ tsp Benjamins Essence of Peppermint
1 tbsp butter or margarine
1 tbsp red & green pepper, diced
Season chicken with powder seasoning, onion, scallions, thyme, garlic, soy sauce, hot pepper sauce, vinegar and essence of peppermint.
Heat butter in a large skillet over medium setting. Sauté chicken until almost cooked.
Add more Benjamins Essence of Peppermint if needed to enhance flavour. Add red & green peppers and some of the Mint Sauce and simmer for 2 – 3 minutes.
